Foodie Fridays : How to make White Chocolate Cheesecake

Calling all dessert lovers! - this super easy no bake cheesecake recipe will certainly satisfy your sweet tooth cravings. This one is always a crowd pleaser because it's creamy and indulgent, but not too heavy or sickly sweet. So put your aprons on and give it a go.. 







Time: 30mins cooking time & 12-24hrs setting time
Serves: 8

Ingredients
  • 250g mascarpone cheese
  • 200g cream cheese 
  • 500ml double cream
  • 400g melted white chocolate
  • 300g digestive biscuits
  • 75-100g melted butter 

Equipment
  • Springform cake tin (I used a 12” one)
  • Hand mixer or whisk
  • 2 mixing bowls
  • Small saucepan 
  • Food processor (optional)

Method


  1. Using a food processor (or your fists of steel), crush & ground the digestive biscuits
  2. Gently melt the butter on the hob at the lowest heat. Slowly stir in the melted butter to the ground biscuits until a crumble-like consistency is formed. The biscuits should look slightly damp with some chunky pieces forming. 
  3. Grease your cake tin with butter and add the biscuit mixture in. Evenly distribute the crumble and press down firmly. Leave to set in the fridge while you work on the filling.
  4. Combine the cream cheese, mascarpone and double cream with a whisk or preferably a hand mixer
  5. Melt the white chocolate in the microwave (at a v.low heat) and add it to the creamy mixture. Continue whisking until all the ingredients are combined and mixture becomes thicker. 
  6. Spoon in the mixture over your cooled biscuit base and leave it to set in the fridge for as long as possible (at least 24hrs) or freeze for 12hrs. 
  7. Unclasp the sides of the pan, lift up the cheesecake & serve :)
